Thanks for hanging out with me this year! 2008 was pretty fantastic...I got engaged AND married, my bro got engaged, friends welcomed new babies, my sis-in-law moved to San Diego...the list goes on and on.
I have a whole lot to be thankful for.

So THANK YOU!

Now let's go out with a bang and welcome 2009 with open arms.
I have a feeling it's gonna be a good one.

Workday Wandering

I'm always starting new little blog post "themes" and I never stick with them. Where did my "blog of the week" go? Oh well...I hope you like this one

In my quest to shed my "Newlywed 15" I've decided to actually get up out of my chair and leave my office during the lunch hour (gasp! what a concept) The idea is to get a little exercise, explore the area in which I work and take a photo or two.

I work in a shady part of San Diego. It's not a very pleasant place to walk around. There's always interesting "characters" waiting at the bus stop, hundreds of car dealerships and auto body shops and more taco stands than you could ever dream of. (That last part is not a complaint)

Back to my point (if there was one)...here's the shot I took today. From my camera phone. Because I wouldn't dare walk around with my real camera in this neighborhood.

Hope you all are having a lovely Holiday season! We had the luxury of staying home for the first time in years. EVERYONE came to us and it was fabulous!

I've been trying to keep up with all the blogs but have been quite busy entertaining. In between board games and bottles of wine we were able to leave the house and took a day trip to the Wild Animal Park. While it's no "bush" my South African in-laws were quite impressed with our little version of Africa.

And as usual the hubby and I were very snap happy....


Cheetah have to be among one of the most gorgeous creatures on this planet. While we were there a park ranger was actually inside their exhibit playing with them and petting them. Their purring was incredible and LOUD!

Giraffe just may be my favorite animal. They're so intriguing and large and their eyelashes are amazing. Plus, in Africa they're always hanging out with the Zebra and I think that's very sweet of them.


On the left is of course a flamingo but on the right is a Shoe Bill. He's such a funny looking guy. Reminds me of a muppet.




It wouldn't be a proper trip to an amusement park without a churro. Yum! Deb and I dug in from both sides.

After the Wild Animal Park we drove to Julian (aka the cutest town EVER) and there was actual SNOW. On the GROUND. It was just the remnants of the snow plow but fun to see none the less. It was freezing cold and crazy busy so we didn't stay long but it was a nice little holiday treat for all of us.

Merry Christmas EVE

I'm still at work - what's up with that? But hope to be off very soon...where I will be greeted by my wonderful in-laws and my gorgeous mother and her husband. Tonight is our traditional Danish Christmas Luncheon with pickled raw herring and meatballs - oh yum! (Sarcasm)

Last Christmas

This time last year Rich and I were packing for our trip to South Africa to spend the holiday's with his family. And this Sunday will mark the 1 year anniversary of our engagement on Boulder's Beach outside of Cape Town - amongst all those funny little penguins. You know they mate for life, don't you?

We're excited to host Christmas this year but the family that is unable to make it will definitely be missed. We're hoping for a trip back to SA for Christmas next year - time to start saving our pennies!

Hope you're staying dry and warm.

This morning I discovered I have a MAJOR phobia of driving in the rain...I think its from witnessing a terrible crash happen right next to me in a downpour last month. I haven't been the same since. It took me twice as long to get to work this morning. It was white knuckles all the way and I was almost in tears.

I know, I know - I'm a baby. I need to get over this - I think this is my first experience with an actual FEAR that is affecting my day to day life (luckily I live in SD and it doesn't rain like this everyday) If it's raining when I leave work tonight I don't know how I'll make it home. Driving in the rain AND the dark? That's way too much for me to handle. I may be sleeping at the office tonight.

I heart Etsy. I really, really do. And a homemade gift just says so much more than a manufactured, store-bought, waited in line all day, couldn't find a parking spot so I got frustrated and went home gift. Oh and they're much less stressful.

Under Construction

Ok I finally figured out how to post LARGE photos on my blog. It required a new template which is why things look a little funny around here. I'll tell you (Coffey) how I did just as soon as Gossip Girl is over. XOXO

Recipe Swap 2008

Ok I just came up with the greatest idea! I'm really proud of myself...this year we're hosting Christmas for the parents (well technically my sis-in-law is hosting but we've agreed that "the kids" will cook for the parents) So since we are Christmas dinner virgins - we need some help.

I was tired of looking through all my cookbooks and cooking magazines wondering "how hard is this?" and "will this even taste good?"

This is where you guys come in...I know all you clever bloggers out there have some amazing recipes up your sleeves and I bet even more of you are in need of some new ones.

Therefore I give you Recipe Swap 2008!

Post one (or more) of your favorite holiday recipes on your blog to share with the rest of us. Be sure to leave a comment here so we know where you're at and what to look for. And be sure to encourage all of your blog followers to post their recipes and so on and so on.

Here's mine - I plan to make it for my company's Holiday Potluck this Wednesday



(click the image if you're blind like me and can't read it)

Heat oven to 350° F. Butter a 9-by-13-inch baking pan and line it with 2 crisscrossed pieces of parchment paper, leaving an overhang on all sides. In a large bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.

With an electric mixer, beat the butter and sugars until fluffy. Add the eggs and vanilla and beat to combine. Gradually add the flour mixture, mixing until just incorporated. Mix in the chocolate chips.

Spread the batter evenly in the prepared pan and bake until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Cool completely in the pan, then cut into 32 bars (8 rows by 4 rows).

To Wrap: The tight seal on a take-out container will keep the bars moist and chewy. (Soak containers in warm, soapy water to remove glue from labels.) Wrap with a bow and personalize with a handwritten sticker.

To Freeze: Instead of baking the batter, freeze it in the pan for up to 2 months. To bake, follow the recipe instructions, baking from frozen, and use the upper end of the time range.



Yield: Makes 32 bars

CALORIES 138; FAT 6g (sat 4g); CHOLESTEROL 28mg; CARBOHYDRATE 20g; CALORIES FROM FAT 41%; SODIUM 55mg; PROTEIN 2g; FIBER 1g; SUGAR 15g

I know I was just complaining about the weather not being cold or gray enough...so I wanted to prove to you that I do appreciate California weather. There are very few places in the world where you can get a late November sunset as gorgeous as this. And for that...I am very, very thankful.

Don't get me wrong....

....I love living in Southern California - but some days I just long for cold weather and the perfect excuse to stay indoors curled up in a blanket with a cup of hot chocolate.









The Holidays Are Here!


The most wonderful time of the year! This year we spent Thanksgiving in Northern California - so on Saturday we went up to the Santa Cruz Mountains and chopped down our own Christmas tree. The family tradition is to tailgate with coffee and donuts while wearing our Santa hats. Once we're all hopped up on caffeine and sugar we scatter throughout the farm in search of the perfect tree. Once you find a contender you mark it with your Santa hat and chop it down! It was such a perfect tradition to kick off the season.
